The Green Party does not ask you to become a vegetarian, but we do believe that we should eat less meat. Better for the planet, and better for our own health. It doesn't have to be a Monday, and it also does not have to be boring, or difficult, or tasteless.

Here are some more recipes that will make you forget that there is no meat in them....

 

Indonesian peanut sauce

1 medium sized onion (or half a large one). 1 tablespoon vegetable oil (not olive oil); 2 cloves garlic, 1 cm piece of fresh ginger, 1 teaspoon ground coriander. 2 heaped tablespoons smooth peanut butter. 1 cm slice of creamed coconut, cut in small chunks, 1 tablespoon dark soy sauce, tabasco. 1 tablespoon brown sugar, 1 tablespoon lemon juice.

Gado gadoCut the onion very fine. Fry in the oil until it begins to brown. Cut the garlic and ginger very fine, or grind together to a paste in a mortar, add the coriander, and add the whole mixture to the onions. Stir on low heat for about 30 seconds, until it is fragrant. Add the peanut butter, stir and heat through. It will become thin and fluid. Now add 1 cup of water, and stir. The mixture will bind and become thick. Cook gently for a minute. Add more water if necessary to make a thick sauce. Stir in the coconut and let it melt. Now stir in the soy sauce, and tabasco to taste. Let the sauce sit for at least an hour for the flavours to develop and blend. Reheat, and add sugar and lemon juice. Sauce may separate a bit because of the lemon juice, but that doesn't matter. Just stir it again.

Tastes really good with hard boiled eggs, with lightly cooked veg (particularly good with green beans), and with fried bananas. Or do a gado-gado. Gado-gado is an Indonesian salad dish, consisting of different vegetables: lightly cooked green beans, slices of potato, bean sprouts, cucumber, lightly cooked cabbage, hard boiled eggs, pepper, etc. Arrange the vegetables decoratively on a large plate, pour some of the sauce over and serve the rest separately.
In the original version the whole is topped with a scatter of crumbled prawn crackers, but these are not vegetarian. Oriental stores have vegetarian crackers, but you can also scatter crushed and roasted peanuts over. Serve with rice.

Vegans simply omit the eggs, or replace them with marinated fried tofu.

 

 

Spicy Nachos

 

You will need;

 

  • A tin of kidney beans
  • A large packet of corn chips
  • A large Onion
  • A red pepper
  • Pasata or tomato pasta sauce
  • Chilli powder and any other spices to taste
  • Grated cheese
  • Guacamole dip
  • Soured cream

 

Chop a large onion and fry until browned.  Then add a chopped red pepper to the pan and fry for another 5 minutes.  Add the kidney beans and the tomato pasata.  Add chilli powder and other spices to taste. 

 

Arrange the corn chips around the edge of an ovenproof tray or dish.  Pour the kidney bean mixture on the top of the corn chips.  Put some grated cheese on top of this.  Put this in the oven at a low heat for about 15 minutes.

 

Remove the nachos from the oven and serve with soured cream and guacamole.
